Rise and Shine! Grilled Breakfast Recipes for Our Guests

If you’re staying with us in one of our Micro-Cabins and want to spend a bit more time in the morning enjoying the view before heading out to explore the Finger Lakes, we invite you to head out to the grill! We’ll supply the basics you’ll need to get started. 

These easy breakfast recipes are great if you want to use your farmer’s market finds or prefer to prepare your own meals while enjoying your vacation on Seneca Lake. 

Sausage and Potato Foil Packets

To make this easy dish, you’ll need nonstick aluminum foil as well as a few pantry essentials. 

Dice up a few red potatoes and an onion, add smoked sausage links, then season with salt, pepper, and herbs of your choice (e.g. garlic salt, fresh parsley, rosemary, etc.). If you’d like, you can also add diced mushrooms, tomatoes, or peppers. Place the mixture inside a strip of foil and fold the sides to make a packet so that the ingredients can steam together. 

Grill over medium heat for about 15 minutes or until the potatoes become soft. Enjoy as-is or top with cheese, salsa or your favorite hot sauce!

Breakfast Tacos

Love tacos? Then you’ll love this breakfast pick! To get started, grab some skewers and the pan we supply to our guests. First, place a few chorizo links on the grill on medium heat. Make sure to brush them with a little oil so they don’t stick. Prick them a few times with a fork so that they cook evenly and once they’re cooked through (if preparing from fresh) or properly charred (if preparing from pre-cooked or smoked), remove them from the grill and slice into ¼ inch rounds. 

Next, it’s time to get your toppings ready! Thread vegetables of your choice onto skewers, brush with oil and grill until cooked through. We recommend cherry tomatoes, scallions, jalapenos or zucchini. When corn is in season, you can also grill whole ears and then cut the kernels off the cob to add to your tacos. While the veggies grill, scramble eggs on the grill side burner. Season with salt and pepper. 

Combine the eggs, veggies, and sausage in corn or flour tortillas. You can also toss your tortillas on the grill for a minute or two to heat them through. Add sour cream and cheese or fresh cilantro and enjoy.  

French Toast Packets

If you’re craving something sweet, try French toast packets with fresh maple syrup and berries! 

To make this easy dish, you’ll need the basics for French toast plus some aluminum foil and some parchment paper.  Tear off two 8x12 inch pieces of foil and then two 8x12 inch pieces of parchment paper. Layer the parchment over the foil. Set aside. 

Preheat your grill on medium heat. Cut your loaf of bread into squares and set aside. In a large mixing bowl, add a few eggs, a few tablespoons of sugar, about 1 cup of milk of your choice and a pinch of salt. Beat together until well combined and then add your bread cubes into the egg mixture until it soaks in lightly. Then, spoon your French toast mixture onto the layered parchment and foil. Fold the sides to make a pouch. 

Grill over indirect heat for about 8 minutes on each side. Top with sliced fresh berries and maple syrup!
